💫Chaozhou fish balls were originally a humble, inexpensive item. A byproduct of fisheries, fishermen, to avoid waste, made the most of the fish by shredding the heads and tails of small, inexpensive fish or fresh fish, hand-beating them into a paste, and then individually squeezing out snow-white fish balls, emphasizing their chewy texture. Poorly beaten fish paste ruined the whole dish. The quality of the fish paste depended entirely on the skill of the chef. Although machines have gradually replaced manual labor, these Chaozhou fish balls remain bouncy and delicious. Add a touch of seaweed and Chaozhou chili oil, and the whole fish ball rice noodle dish is simply superb.
