During the reign of Emperor Qianlong of the Qing Dynasty, it was presented as tribute to the imperial court, and continued to be presented as tribute every year thereafter, hence the name "tribute vegetable". Because it makes a sound when eaten, and is crisp and refreshing, it is also known as "sounding vegetable".
🥬It takes 30 catties of fresh dried gongcai (a type of vegetable) to produce 1 catty of dried gongcai. Soak in warm water for 1 hour and it's ready to be used in cold dishes, stir-fries, or hot pot.
